Pamana week 10: A tribute to a very special, and often forgotten figure in our culture's cuisine, Ruby Trota. There is in fact a house in the Philippines that "fried chicken built" as the saying goes. That house is now an international success story that we love, and arguably responsible for popularizing the culture of fried chicken to many Filipinos. Many know this place well, and how during WWII it became a popular place for people to eat the crispy chicken that was something of a luxury item. What many don't realize, is that the place though now named after its patron, was built from the tenacity and grit of his young niece, Ruby who cooked all the food in the early days.
